Recipe | Pechay Guisado

Did you know that pechay (or bok choy) has great health benefits?

Pechay have anti-cancer properties, and it is rich in folate , iron, calcium, magnesium, zinc, and vitamin K that are great for bone and reproductive health.  It can naturally decrease blood pressure too because of potassium, calcium, and magnesium. But then again, lower your salt intake to maintain a good level of blood pressure (kaya pwede mo pang bawasan yung salt o patis sa recipe na ito).  If you really are on a budget and wanted an alternative to spinach, pechay would be next in line.



Before, AM used to dislike vegetables. But since I encouraged him to taste the dish before pushing it away, he loved the way I cooked our veggie dishes, and one of which is this pechay guisado.  The only key to cooking tasty vegetable dishes is to add more garlic, tomatoes, and most specifically, onions!

Anyway, my sister gave me this tip on how to clean your veggies well and not just run water on it.  We usually soak our veggies in water with vinegar.  Cover your veggies with water and add about 2-4 tablespoons of white vinegar and let it soak for about 5 minutes. You'll notice that there would be more dirt floating.  Drain and wash your veggies on running water.  Yet my sister adds baking soda in the water-vinegar bath.  Your choice really to either have baking soda or not.

And so, here's the very quick vegetable dish that goes well with fried fish, pork, or chicken.  You can eat it as it is with steamed rice.  That's what Oyo loves the most, veggie and rice! :)

Pechay (Bok Choy) Guisado

Ingredients:
  • 2 medium red onions, sliced
  • 4 cloves of garlic, coarsely chopped
  • 2 red tomatoes, sliced
  • Salt or 1 tbsp patis (fish sauce)
  • 2-3 tali ng pechay or bok choy, chopped
  • 1 cup water
  • 2 tbsps oil
Instructions:

  1. Igisa ang sibuyas hangga't mag-transluscent. Idagdag ang bawang.
  2. Once nangamoy na yung bawang, ihalo na yung kamatis.
  3. Timplahan ng asin o patis.
  4. Kapag lutong-luto na yung kamatis, saka ihalo ang pechay at igisa.
  5. Pour in water. Cover. Let it simmer under medium heat for 2 minutes.
  6. Serve with fried fish, pork, or chicken. Or you can eat it as it is with steamed rice.
